Update: had these posts locked & loaded but technical difficulties arose and forced me to post late. Damn you, internet! Also will update with pictures as soon as I can get that part functioning!
For dinner tonight, we wanted to eat in but pretty much all we had left was pasta and cornbread (very carb-y). So I made bowtie pasta with I Can’t Believe It’s Not Butter and cooked a box of Jiffy corn bread muffins. We enjoyed eating it but it sat in our stomachs like a lump of carbs usually does. The pasta was 300 calories for each of us, with 25 added for the ICBINB and the corn muffins were an additional 350 per person. Not exactly a low calorie meal, to say the least! Especially when you ate REALLY low calories all day, it feel like you ruined the day! And when you want to ruin the day, a nice burrito would really make you feel better than corn muffins and pasta! But oh well
So the meal per person was 675 per person. Yikes! That’s quite high.
And just for fun, here’s what I had for lunch that day: a footlong Veggie delite sandwich from Subway. It was on wheat bread with white American cheese, lite honey mustard, pickles, peppers, pepperoncini’s, olives, onions, cucumbers, lettuce, bell pepper… mmm
And for breakfast that day? Oatmeal, but of course. I also ate a 90-calorie chocolate chunk granola bar and an apple (60 calories) for snacks (mid-morning and post-lunch). So dinner wasn’t ideal but trust me, I’ve had FAR WORSE days!!
