The College Breakfast Club Sandwich

Welcome to the world of being a college student with two problems: you need a snack but you’re out of groceries! Don’t run out to the store just yet–there’s a way to use the heel of your bread and that last piece of juicy lunch meat. It makes a great breakfast sandwich, or, as I’d like to call it, The College Breakfast Club. Let’s get started!
Here’s what you’ve probably got left in your refrigerator right about now, or, Your Ingredients: American cheese, ham or turkey lunch meat, eggs, and bread. You would’nt think this could make a delicious breakfast or snack, but it can so don’t throw away that last bit of bread yet! Here’s what you’ll need, or, Your Supplies: a working stove, a frying pan, a flipper or fork, and some butter/margarine/Pam spray (optional, but I use it because I don’t have non-stick cookware).
Turn your burner to medium heat. Now to lube up our frying pan. I use a couple pats of I Can’t Believe It’s Not Butter Light because that’s whats always in my fridge cause I use it for everything. Now spread it around your pan to lube the whole thing up real nice. Once you’ve done that, add two to three pieces of lunch meat to the pan. Let them sizzle in the heat for a couple of seconds.
Now, once your lunch meat is looking pretty brown, continue to flip from side to side. Right before you take it off of the pan, it should look nice and brown and a size smaller than it was. Set the lunch meat aside. Now crack two eggs onto the frying pan. I leave my eggs on the first side quite a while, burned almost, cause I like that taste. Then, flip the egg over and cook for a minute and put a slice of American cheese on top of each egg. Now turn off your burner and let the cheese sit on the egg for a couple minutes. While you’re waiting for the cheese to get nice and melty, you can toast your bread. Or, if you don’t have a toaster, just pop the bread onto the pan for 15 seconds on each side and it will be nice and crisp. The next step is putting it all together.
Now you just have to assemble! The sandwich on the left is bread, ham, egg & cheese while the sandwich on the right on bread, ham, egg & cheese, and ham again. Delicious! It’s my version of Jack in the Box’s Breakfast Jack. Now that it’s done, you can feel free to add ketchup, mayo, or even hot sauce. You’ll love it, trust me. And now you don’t have to toss out the last couple of eggs, pieces of bread and lunch meat cause you don’t know what to do with ‘em. Everyone wins!
