Pumpkin Chocolate Chip Cookies

Yesterday I made Pumpkin Chocolate Chip Cookies. They are great. Using the cake mix makes them so moist and chewy, and the pumpkin & pumpkin spice is so full of flavor that each bite is so rich and amazing, you HAVE to love them!

Although they looked somewhat icky as I made them:

I left chunks of cake mix in the cookies.. I love biting into them!

WHOA! That looks like a TON.. but it's only 1/2 a cup!

Here’s what I put in ‘em:

-1 box Spice Cake Mix

-2 cups Canned Pumpkin Pie mix

-2 teaspoons Pumpkin Pie Spice

-1 cup (1/2 bag) of Mini Semisweet Chocolate Chips

I heated my oven to 350 degrees, sprayed a cookie sheet with cooking spray & water, and put ‘em on. Baked each batch for about 15 minutes. I used more pumpkin that most of these recipes call for, so they had to be cooked slightly longer.

Hello cake mix & mini chips!

This recipe made 3 dozen cookies. That’s a lot. And I made them pretty good sized, too.

Matt and I loved them. But we ate our fair share, and how we are (maybe?) pumpkined out for a few days!
