Pizza!

Mmm.. Veggie Pizza!

After a killer workout on my new elliptical and a cool down bike ride, I was craving homemade pizza! I went to the store to grab the week’s worth of groceries and picked up some new Mediterranean gluten-free pocket-less pitas; perfect for pizza!

For my pizza, I use one pocket-less pita, two tablespoons of pizza sauce (I really don’t like sauce at all.. two tablespoons was the perfect amount!), 1/8 cup shredded Mozzarella cheese, black olives, pineapple, yellow squash, zucchini, and broccoli. It was heaven! I baked it for 13 minutes at 350 degrees and it was just perfect!

Homemade Pizza is the Best!

After I ate my pizza, I had a 130 calorie ice cream bar. It was small but perfect. Maybe even too sweet? Have you ever noticed that low-sugar/low-calorie desserts seem to taste sweeter than the normal?  Anyway!

I made Matt two pocket-less pita pizzas which had pizza sauce, mozzarella cheese (same amounts as myself for both), turkey pepperoni, black olives, pineapple, and sliced jalapenos. He loved it!

Matt thoroughly enjoyed his pizzas… so much so that I made him a third! What sparked making homemade pizzas (besides my craving)?

Matt and I want to stop eating out so much. We used to do it when we were remodeling our kitchen because we kind of had to but now we just do it because we’re too tired to cook, it’s fun, it’s conveinant, etc. Excuses! We want to use the money we spend eating out on something better! A new car, perhaps? :) In an effort to start eating out less, I am practicing my skills on cooking our favorite “eating out” meals.
