Nice Little Sunday… and it ended too fast!

Sunday was very, very nice. Matt and I woke up and had two huge coffees (a heavy Starbucks weekend for us!) and a super light breakfast, since we were planning to go out to lunch around 12.

Then we went out for Mexican food. We each ordered a healthy burrito. He got his with green sauce, I got mine without.

Grilled Chicken, Steamed Pinto Beans & Steamed White Rice

The healthy burritos (that’s what the restaurant calls them, although I estimate them to be between 600-800 calories) are comprised of a whole wheat tortilla, steamed white rice, grilled chicken, and steamed pinto beans. They sprinkle a low-fat Mexican cheese on top as a garnish. Overall, it’s a really tasty and filling burrito! Today I ate 3/4 of the insides out and left the rest, including the tortilla, untouched. I filled up really fast! So we left full and happy.

Then we came home and relaxed in the cool house. We had planned to buy our elliptical today but decided, since I got a splitting headache, to put that off to an after-work outing this week. Instead we worked from home (actually not bad, surprisingly!) and enjoyed some coffee and Taco Bell. Yes, Taco Bell! I really miss running and working out but MY BODY missed it more than my mind, what with all this Mexican food and Taco Bell! But I enjoyed it. Those bean burritos are just GOOD. :) I’m going to have to majorly food-detox tomorrow!

Now I’m doing some research and just trying to soak up all this relax time because next week? I’m hoping my knee will be healed up enough to go for a 7 mile run on Tuesday. That or ellipticisin’ for a few hours a night. Either way..  I’m going to be pooped. Happy Sunday.
