When I am able to get back to working out, I will be starting a hardcore work-out routine. What goes best with that routine? A lot of really healthy and filling meals that are also yummy. My favorite? A little concoction I invented (ha, I’m sure everyone makes this) called VEGGIE & CHICKEN STIR FRY! My wok is huge pain in the ass to clean, so I try to only use it when I’m cooking/steaming a lot of food. Stir fry, for me, is one of those things that also makes a good second and third-day lunch/dinner. So I make a lot in my Breville Wok.
I put a tiny bit of EVOO (I hate that term but it’s so easy!) in the bottom and brown the pre-cooked grilled chicken strips first (for about 5-7 minutes). Then I add a little water, put the veggies in and put the lid on. I steam it all for about 10 minutes and it’s done. Very easy. My sister-in-law makes rice and wheat noodles with her stir-fry but I am not a fan of rice, so we eat it plain. I’m sure Matt would love rice with it but I don’t make it so he doesn’t get it
I put garlic salt all over the veggies once they’re cooked because I put garlic salt on basically everything. But the chicken is so high protein/low-calorie, and the veggies are so good and good for you, that this meal is one of my favorites. And hey, chopping veggies seems to be a little therapeutic, too
And yes, that is my photo above. And that is my lovely Breville Wok. She’s a pain to clean but she works soo good!
Another recipe I’ve practically run into the ground is Turkey meatballs with whole wheat spaghetti and red sauce. This recipe from the Food Network is really yummy but with any recipe, I’ve added & subtracted things to make it my own. I usually buy Jennie-O or Foster Farms extra lean ground turkey meat, which is really good for you when eaten in moderation. And the whole wheat pasta comes in different varieties, but boasts heart healthiness among other things. It’s pretty easy to make, too, which is a selling point for someone who is ready to sit down after work
I’ve 86′ed the onion in the recipe, as my husband hates onion. I also don’t use fresh rosemary, but I do use a parsley-rosemary dry mix. I don’t use Parm in the meatballs, either, but that’s just because I never remember to buy it and we like it just fine without! This also works really well as a left-over. Something that goes amazingly well with this dish is steamed broccoli and… garlic salt!
So those are two of my favorite diet recipes. Not the healthiest of the healthiest but two that are healthy and easy to make. What are some healthy recipes you like??
P.S. I’ve had a dish sort of like this at Applebee’s but am not allowed to make it at home as my husband can’t even stand the smell of seafood! But if you like grilled shrimp, you gotta try these. Yum, yum, low-calorie, yumsville.
