Wow, I’m exhausted and it’s only 5:15 pm! Today has been hectic from the moment I woke up! Good thing I started the day off right
For breakfast I had a Bagel Thin with 2 tablespoons of Sugar Free Peach Preserves.
It was really good! Normally I get the Sugar Free Strawberry Preserves, or even the SF Apricot, but I decided in the name of my love for peaches, I’d try it! And while it’s delicious, it sadly is not as amazing as the Strawberry or Apricot. BUT I might buy it again because it’s less tempting to go past the 2 tablespoon limit with a flavor that isn’t complete scrumptiousness.
Mid-morning snack was a Cherry Pie Lara Bar:
This was my FIRST Lara Bar and aside from the size being disappointing (the bar was probably from the ‘L’ to the beginning of the ‘A’ in Bar), the bar itself was delicious. I myself am a HUGE fan of unsweetened cherries because I love that bittersweet taste, so I loved it. But if you only like sweet treat bars, this one’s not for you!
It did the trick for a pre-lunch snack. Well, that and two very small peaches
Then for lunch I had something new. Last night I was at the grocery store and I found these Whole Wheat Pitas that are only 130 calories per pita pocket and had all natural ingredients and lots of fiber! So I said I’d give ‘em a go. I made a Pita Pocket of Turkey, Reduced Fat Cheddar Cheese, Horseradish Mustard, Red Onion, and Organic Romaine Lettuce. It was good. Something that would have made it better? Cucumbers and sprouts! But I didn’t have any
On the side I had a LARGE handful of BBQ flavored Soy Crisps.
Since I had a Dr’s appointment this afternoon, I knew I’d probably be non-stop and not have time for my 3′o’clock snack. Instead of being starving when I came home to cook dinner, I decided to eat my normal afternoon snack about and hour after lunch. It was Voskos Greek Yogurt, 1/2 cup Fiber One Raisin cereal, and 1 small peach, all cut up. It was SUCH A GOOD SNACK! The best yogurt-add in combo yet! Very filling, too.
After lunch I worked for a few more hours then headed over to my Dr’s appointment to see what the heck is going on with my stoopit knee! Verdict? Don’t know yet. I have to get an MRI because the tendon behind the meniscus is perhaps twisted. So basically, my knee has its panties in a bunch. BUMMER!
When I got home I had a Chocolate Brownie Z Bar by Clif while I made dinner. I threw dinner in the oven, did the dishes, walked the dog, took out the garbage, and started uploading my photos from the day. While they were loading, Matt and I had dinner and talked about the day. What did I make? Turkey Meat Loaf with Steamed Cauliflower, Broccoli and Green Beans.
It was REALLY good. Tonight I tried a mix of two recipes and it was better than my original! Here’s how I made it:
Turkey Meat Loaf:
-1 pound lean ground turkey meat
-1/4 teaspoon black pepper
-1/4 teaspoon Parsley
-2 eggs
-1/2 cup oats
-1/4 cup Italian breadcrumbs
-1/4 cup (slightly less) ketchup
Mix all ingredients together (with clean hands!) and place in PAM sprayed cooking dish. Put the mix in the dish and mash it down, like a loaf. Cut a slit down the middle of the loaf and pour two tablespoons of Worcestershire sauce in the middle and then over the slit. Top with some ketchup and breadcrumbs, cook at 350 degrees for one hour. Crispy goodness!
